My Big Fat Greek..nah, that’s too obvious a joke.

The chicken was actually moroccan inspired, as was the flatbread…so…really the only Greek thing about this dinner was the tzatziki sauce.

But whatever.

I’ll skip talking about the chicken, having covered that before, and focus on the really important parts of this meal: the carbs and the dairy.

Garlicky Grilled Flatbread!


Ingredients
1/2 raw pizza dough ball (I got mine from the pizza counter at Whole Foods; you can get it generally frozen at grocery stores or buy it from your local pizza joint)
olive oil
1 tbsp garlicky steak rub (or you can make your own blend with garlic salt, pepper, cumin and coriander)

Directions
Roll out dough ball into as large of a rectangle as you can.  Brush with olive oil and sprinkle with steak rub.  Place on grill over medium high heat and cook for about 4-5 minutes, watching carefully.  Before flipping, brush top side of dough with more olive oil, then flip.  Let sit until cooked through, pull off grill and cut into strips.

Tzatziki Sauce
Ingredients
6oz fat freeGreek style yogurt (I used Fage 0% plain)
1/2 c. cucumber, shredded and drained
1 tbsp lemon juice
salt, pepper
1 garlic clove, minced

Directions
Combine all ingredients thoroughly; let flavors incorporate for about 15-20 minutes before using.
