Cuckoo for Coconut Cupcakes

I got this recipe on Bakespace from user idreamofdessert, who got it from the Barefoot Contessa Ina Garten. I added a bit of color to mine with some fresh raspberries.  The cupcakes were dense but flavorful and sweet.
