Mushroom Mania & a $75 Whole Foods Gift Card Give-Away

It was fortuitous luck, really.  I was wandering through the cornucopia of brightly colored produce at Whole Foods this past weekend, and a large display of little orange beauties caught my eye: satsumas.  It reminded me of the citrus challenge we did this time last year, where we sat down with a crate of satsumas and clementines and figured out what to do with them.  My first recollection of that experiment was the incredible Satsuma Delight (because OMG!) but then I remembered the fresh satsuma cheese plate and the delicious clementine-scented, parchment-baked mushrooms.  I started craving mushrooms.

It was fortuitous, because Whole Foods was kind enough to offer me another challenge this winter: mushrooms.  (Badgers everywhere, rejoice!) Super Mario himself could not be so lucky.  I’ve put my head to it and I’ve got a list of mushroom dishes that I can’t wait to share with you.  They’ll be popping up all over the blog over the next week (mushroom joke!).

    I made bew stew a couple of days ago, and I employed a trick a friend of mine told me about. You cut up mushrooms into very small pieces and sauté them with the beef so that that practically melt. It definitely imparts an earthy flavor to the stew, but it also gives the broth a silky texture.

    It is hard to say my favorite!!! For all the wonderful recipes out there, one way that I adore mushrooms are to simply eat plain, washed mushrooms with sea salt! They are so low calorie and satisfying. I also love them in salads. (and I also love cooking with them, but that will be next time).

    My favorite way to eat mushrooms is whole pan cooked white mushrooms; pan cooked in butter that is, and sherry, and a few twists of black pepper, plus some fleur de sel, then doused with a bit of cream – on toast – like a English person.

    My husband’s grandmother forages for wild mushrooms, and simply sautés them in olive oil with garlic. They’re phenomenally delicious, and when she’s gone we’ll no longer be able to enjoy this dish, since none of us feel confident enough in our mushroom identification skills.

    I like mushrooms in stir fry – with peppers (red and green), chicken or beef, snap peas, string beans, water chestnuts, etc..
