Nobody gives me the raspberry!

I’m ashamed to say that I think that is only the second headline reference to Spaceballs on this blog.  I’m sorry about that.  I’ll do better.

Anyway, how are you?  How’ve you been, Internet?  Oh, really?  Interesting.  I’d love to hear all about that.  We should get together and you should tell me about it over a nice glass of raspberry soda. 

Just one glass, though.  Any more than that and I fear you might fall so madly in love with this homemade soda of mine that you might never leave my house.  You’d become a recluse, unable to eat or drink anything else, disheveled and sad, roaming the halls of my house moaning “Moooore Raaaaaaspbeeeerrry,” a pitiful, red-teethed, pre-diabetic shell of your former self.  And I would never do that to you.  Knowingly.  Well, maybe.  But probably not.

Now how about that drink?

Raspberry Soda

Yield: 1 drink

Raspberry Soda

Ingredients

    For the raspberry syrup:
  • 1 cup sugar
  • 1 cup water
  • 1/2 cup frozen raspberries
  • For the drink
  • lemon juice
  • club soda
  • frozen raspberries
  • ice

Instructions

    Make the simple syrup
  1. Mix sugar, water and raspberries together in a medium-sized saucepan over medium heat. Cook until boiling and the sugar is dissolved. Let cool.
  2. Make the drink
  3. Put some ice in a tall glass and add a splash or two of lemon juice (adjust the tartness to your taste).
  4. Fill glass 1/3 of the way with the raspberry syrup. Fill the rest of the way with club soda. Garnish with raspberries. Drink, be merry.
